Picky Eaters Recipes + How to Deal with a Picky Eater Tips

Is your toddler or baby a picky eater? Are you struggling with how to get your picky eaters to eat vegetables and try new foods? In this video, I share my top 5 tips to deal with picky eater and my top 3 recipes that my toddler currently loves.

PICKY EATER RECIPE 1: 

SPINACH, MUSHROOM, and HAM QUICHE 

(Inspired by the Magnolia Table quiche recipe) 

Ingredients List: 

- 2 frozen pie shells (ie: Tenderflake brand)

- 1/2 onion 

- 1 tablespoon butter 

- 2 cups baby spinach 

- 4 cups mushrooms 

- 6 large eggs 

- 1 cup of ham pieces 

- 1 cup of half and half 

- Salt and pepper to taste 

- 3 cups of cheese (ie: I mix cheddar and mozzarella) 

Steps: 

- Pre-heat oven to 350 F 

- In a large pan, melt the butter and sauté the onions and mushrooms 

- Add the spinach, wait until the spinach is cooked and set aside 

- In a bowl mix the eggs, salt and pepper, and half and half

- Add the sautéed veggies (onions, mushrooms, and spinach) 

- Add the ham and the cheese 

- Pour the quiche mixture in the two shells 

- Bake for 45 minutes 

PICKY EATER RECIPE 2: 

PEA & CARROT STEW WITH BACON

(Inspired by the Lebanese dish "bazella") 

Ingredients List: 

- 1 onion 

- 1 pound of ground beef 

- 5 cups of frozen peas 

- 3 cups of diced carrots 

- 1 large can of tomato sauce (29 oz) 

- 1 cup of water 

- Bacon bits 

- 1 tablespoon of olive oil 

- salt and pepper to taste 

Steps: 

- In a deep pot heat the olive oil and sauté the onions 

- Add the ground beef, breaking it down into tiny bits 

- Add the pre-cooked bacon bits (just fry them separately and add to the pot) and the carrots 

- Add the tomato sauce, 1 cup of water, peas and salt and pepper to taste 

- Cover, bring to a boil then let it summer until the carrots is cooked through 

- Serve with rice or pasta 

PICKY EATER RECIPE 3: 

QUICK CHICKEN TACO BOWL 

Ingredients List (for 4 portions) 

- 4 Chicken thighs (I prefer them with the bones and skin in but you can get them any way you like) 

- 1 can of corn 

- 1 can of beans 

- 2 cups of rice 

- Paprika 

- ground cumin 

- Cilantro 

- Lime 

- Avocado 

- Salsa 

- Salt 

Steps: 

- Cook the chicken any way you like. I use chicken thighs with the skin on and bones in to retain the moisture. I rub them with the cumin, salt, and paprika and pop them in the oven for 45 min at 450 F 

- Assemble your bowl with chicken, rice, beans and corn + all the toppings and spray some lime juice on top
